Which cassettes (10 speed) are least prone to cross chaining?
I am trying to build a 1/niner (really a 1/tener) and speaking anecdotaly I seem to recall the Ultegra's would run pretty quiet, even in the 28T rear gear and a 50T front. Please no lectures on why this is a bad idea. Remember I want to use a single in the front.
I forgot to mention, my bike is a Salsa Casseroll, which has the slightly longer chain stay; not touring bike but more like Cyclocross long.
The components I am playing with were free, which are Deore 9 speed; hand me downs, so it is not like I lost anything. Noise is only noticeable in the two largest, and only really bad in the largest (32T I think). I think my money would be better spent on a front 2 gear crankset, but hey, did I mention the parts were free? Lots of good answers which I was not expecting. Thanks all.

I design bikes for companies and can tell you that I personally have not found a good combination to make a 1x10 and keep everything quiet as well as have a reasonable chainring/cassette life.
The closest I have gotten (and this is not near as good as it should be) was with SRAM Apex... keep in mind that I have access (and have tried) just about any combination that is reasonably possible and nothing satisfies me, or my clients, sufficiently to trust them in the open market. No Shimano stuff even gets close when it comes to the noise/wear factor necessary for a 1x10.
Now, there is a way but you probably won't like it. You could add 35mm to 40mm to the chainstay length and reduce the seat tube angle to about 69º. This would reduce the chain angle but also make the bike handle like a truck.

So I'm choosing between these 2 Specialized Road Bikes... which one would be better for climbing through hills and mountainous terrain areas ??

The ratios for the allez comp will make it easier to climb just a little, and it's probably a bit lighter too. Sram vs Shimano is all preferences, whichever you like. However you can't reach the thumb lever from the drops in sora
And with sram apex you can get an 11-32 cassette, it'll feel a little spread out but it'll get you up those hills easy. Also the Comp has BB30.
