Answer
No way to answer what size bike you need since people of the same height have different proportions. Mountain bikes often come in S, M, L, XL. My guess is a large but no way to know without more info.
If you want to ride extreme trails, you need a mountain bike. Hybrids are good overall bikes but don't do single track and don't do high speed bike rides well. Most serious riders I know have a MTB for the trails and have a road bike for the road. Hybrids tend to be for the casual cyclist because you won't be able to easily keep up with people with similar fitness on a group ride if they all have road bikes.
There is no "best" brand. My personal feeling is that similarly priced bikes in the same category will be very similar. Some might have a slightly lighter or stiffer frame. Some may have a better component group or better wheels. Overall though a $1000 US Cannondale, Trek, Specialized, etc. will be pretty comparable in performance and reliability.

No, they will hold over 200 pounds. BUT, they are NOT mtn bikes, or for off road cycling!
