This would be my first bike and I just want some specifics to look out for while shopping.
I'm 5'9, female, 140lbs, and will be using this bike for commuting, grocery shopping, etc. I want to buy used too, what should I look to spend?
Also, I'm pretty good at detecting deception but any tips on how NOT to get screwed by the sales guy would be great.

Visit the local bike shop in your area and take a look at commuter, comfort, and hybrid bikes. Performance bike is a good place to go if you have one close by. The bike shop will help you select the right size bike for your needs. Stay far away from Walmart and other department store bikes they are low quality. You can get a nice bike for around $300-$500.

What type of bike should I buy?

I'm going to hit up some sports stores later this week. I am going to volunteer in the parks where I'll basically bike around the trails. It's mostly flat dirt or stone trails. I'd prefer something lighter weight. My budget is to keep it under 500. Any suggestions?

Sporting goods stores or REAL bicycle shops? Places such as Dick's Sporting Goods & Sports Authority might be one step above Wally World or K-Mart...maybe. That's about it. Assembly is "iffy" at best with NO free follow up service - as with a bike shop. One bike shop near me has a LIFETIME service warranty. http://bigshark.com/about/policies-and-shipping-pg11.htm
Depending on how rough these off-road trails are - you will need either a hybrid or ATB bike. Hybrids (sometimes called "fitness bikes") have wide enough tires with a tread pattern aggressive enough to tackle light off-road trails - the man made kind of crushed limestone and pebbles. If it's a rougher trail, you'll need an ATB or mountain bike.
